Dark Chocolate Cherry Brownies

Just in time for Valentine’s Day! I came upon some cherry baking chips at the store the other day and just had to have them. I had no idea what I would do with them, but I knew I had to buy them. Combine them with a box of brownies and you get a super easy, gooey, decadent dessert. Enjoy these with a tall glass of milk and say “mmmmmm.” In this recipe you can use frozen, fresh, or canned cherries. I used organic frozen sweet cherries from none other than- COSTCO!

Dark Chocolate Cherry Brownies

For the brownies:

1 box of Dark Chocolate Brownie Mix (I used Ghirardelli)
1/2 cup cherries, chopped
1/3 cup cherry baking chips ( I used Log House brand)
1 tsp. cherry extract

For the frosting:

1/2 cup butter, softened
1-2 cups powdered sugar
3 Tbsp. cherries, chopped
1 tsp. cherry extract
1-2 Tbsp. heavy whipping cream

1. Mix brownies according to package. Stir in extract and fold in baking chips and cherries. Bake according to package directions. I used an 8×8 glass pan and they turned out perfect at 325F for 50 minutes. Let cool completely before frosting.

2. For the frosting, whip the butter until fluffy. Add in the powdered sugar and alternate with the whipping cream until you get a creamy consistency. Add in the extract and cherries and whip for another minutes or two. Spread on cooled brownies.

What does Holly Homebaker Eat on Her Birthday?

Cake of course!

I’m one of those unfortunate people whose birthday falls between two of the biggest nights of the year- Christmas and New Years. When I was younger I used to get the dreaded double present, half Christmas and half birthday. Oh how I hated that! And to top it all off everyone was either busy or out of town on my birthday. What’s a girl to do?

Well, now that I’m older I want to do a whole lot of nothing. A day of relaxation, maybe some shopping, and cake of course! I used to get one of those red velvet ice cream cakes from Cold Stone Creamery for my birthday. However, a few years ago every Cold Stone Creamery closed shop in Memphis. I moved on to Coconut Poke Cake as my new birthday cake of choice. My husband happily made it for me every year until-

Orange Crunch Cake

ORANGE CRUNCH CAKE!

You may remember me writing about my recent trip to Sanibel and Captiva Islands. While there we stopped by The Bubble Room to try their famous Orange Crunch Cake. It’s a huge yellow cake with crunchy bits of almonds and brown sugar baked in between the layers. It’s topped with an orange cream cheese buttercream. I loved the flavor combination. What I did not love was that it seemed pretty dry. I knew I could do better.

After brainstorming a little bit and researching recipes on the internet for a clone I came up with my birthday cake. Yes, I made my own birthday cake. My husband offered to help, but this is a project I was all too happy to take on myself. I even got a little crazy and went extra crunchy on the crunch factor.

Orange Crunch Cake- Crunchy Layers

It was amazing. Best.Cake.Ever. And I hate to say this (not really), but it was so much better than I had in Captiva. I can’t wait for an excuse to bake this orange monster again.

Due to the crispy crunchiness found in this cake, I have been unsuccessful in making the perfect Orange Crunch Cupcake. However, the cake is available to order anytime.

Two things I’ll never buy again.

Just kidding! I’m already on my 5th container! This is by far my favorite Christmas find this year. I’ve never seen it before this year because I usually skip the ice cream aisle. It’s my weakness. Well, one of them anyway. This ice cream is a huge problem for me. I eat this every.single.night. It’s gotten so bad that when I come out from putting my daughter to bed, my husband is there on the couch waiting with a bucket of this ice cream, two spoons, and The Walking Dead (we had some catching up to do on this season).  That’s right. I don’t even bother with a bowl anymore. I eat it straight out of the container. Why would I want to keep interrupting my show to get seconds, thirds, and possibly more?

I have a love/hate relationship with sweets. I’ll buy a few treats and then when my pants start to get snug I’ll go on a pantry rampage and give all my sweets away or throw it all out. I did that with this ice cream. I was on my second container when my skinny jeans were feeling a little too skinny so I promptly marched to my freezer, pulled out my ice cream, and chucked it into the trash. True story. Then the next day I picked up another bucket. It’s that good. I tell myself it’s a once of year thing so why not? New Years is for resolutions anyway.

If you are going to try this Christmas crack I would personally pick up the Gingerbread House flavor first. Even though both flavors are out of this world, The Gingerbread House flavor is my favorite. I think it’s the marshmallows that get me.  It’s true what they say. Blue Bell IS the very best.

How Do You Have a Holly (Homebaker) Jolly Christmas? Let me show you.

I’ve been slacking in my blog posts lately this holiday season. I’ve been so busy baking and shopping that I haven’t had much time to sit down. We’re having a very sweet Christmas this year. I’ve been indulging in plenty of yummy goodies. My favorite find so far I’ll share with you later on this week. For now, let me show you how we do Christmas.

Welcome to our Gingerbread house! Most of these outside pictures are from last year. I crafted all of the decorations. Thank you Pinterest! Unfortunately, time has gotten away from us this year so we haven’t been able to put anything up except for this wreath. We had a couple of other things up such as peppermint discs, and candy cane columns, but I was unable to find those pictures. It was really cute, but it took a lot of time. Hopefully next year we will be in our new home and we can start all over again!

My favorite thing to decorate is the mantle. I always love putting it all together. Of course, I have a sweet theme, and as usual most items were bought at the dollar store! The trees on the right I made with yarn and gumdrops. The branches on the left were from my own backyard and some leftover from a craft project. I did string all the gumdrops by myself. That is a very sticky task. It’s actually from last year and not in the best shape. No way was I trying it again this year.

Isn’t this little guy the cutest? I found him at the dollar store and knew just what I wanted to do with him. He was going on my cupcake stand!

This year we started a tradition for my daughter. Every year I want to buy her a piece for her own Christmas village. What better way to start her collection than with a Bakery?

She loves to look in the bakery window at the cookies and cakes.

Another craft project I did last year. Cupcake ornaments! These turned out super cute.

I made these as well. They were super easy. Just stick gumdrops in toothpicks. It would be a great project for kids. The ornament on the bottom left is just a gumdrop wrapped in tissue paper to look like candy.

I even have to match my gift bags and gift wrap with my sweets theme. Yes, I get a little crazy this time of year.

Holiday Orders

The time has come to place your orders for Christmas!

I’ll be taking orders until the 17th. Cupcake jars are priced at $6 a piece with a minimum of 1 dozen ordered. These will be shipping the 19th. I offer 2-day or overnight shipping only. Please contact me if you are interested and I will get shipping prices. For this month only, I will mix and match any cupcake jar orders. This means, you don’t have to order a dozen of 1 flavor. Please see available flavors below. If you pick a flavor with a cream cheese frosting, please note that I will substitute it with buttercream.

Local orders also need to be in by the 17th and will be available for pick up on the 21st. Minimum order is 1 dozen, 1 flavor. These make great gifts!

Big, Big, Big News!

To all my lovely non local family and friends who have asked how they can get some of my awesome cupcakes…

 

 

Here’s my answer. Jarred cupcakes! These jars hold two cupcakes each. The one above is shown in our ever popular Reese’s Cupcake. Every cupcake flavor listed under our SugarPuddin’ Sweet Shop will be available except any cupcake with our cream cheese buttercream.  I’m still working out some details, but these should be ready to ship by the first of December. Just in time for the holidays! Look for more information coming soon, including how to order a holiday sampler pack of our most popular flavors.

Nanny’s Chocolate Sauce

I once knew a lady by the name of Nanny. She was a true southern woman. She stayed in the kitchen all day boiling potatoes, frying okra, baking cornbread. She cooked three meals a day. There was always enough to feed an army. I loved going to her house to visit. Unfortunately, I learned of her passing not too long ago. She was a very sweet lady and left behind some wonderful memories and some delicious recipes. She was the one that introduced me to Chocolate Gravy. One bite and I was hooked. I promise to post that recipe another day, but this post is about her famous Chocolate Sauce. It’s actually more of a fudge sauce, so beware if you aren’t too keen on very rich desserts.

You can serve this sauce over anything, but I serve it just the way she did, over Duncan Hines Classic Yellow Cake. I know what you’re thinking. Yes, I am a cake snob and I only bake from scratch. However, there are some things in life that just can’t be replicated. Unfortunately, this is true for Nanny’s Chocolate Sauce and yellow cake, specifically the boxed kind. Maybe it’s because I’m nostalgic, but I think Nanny knows best.

 

Nanny’s Chocolate Sauce

 

3/4 cup sugar

3 Tbs. cocoa

1/3 cup Karo (white) syrup

6 oz. evaporated milk

1/4 cup butter

1tsp. vanilla

 

1. Combine all the ingredients in a saucepan over medium heat. Let it come to a boil and reduce to simmer.

2. Simmer the chocolate sauce until thickened (about 15 minutes), stirring frequently.

3. Serve immediately.

Buffalo Chicken Noodle Soup

Need something to warm you up this winter? Tired of the boring ho-hum chicken soup?  I’m always looking for spicy recipes since my husband is from Buffalo and loves spicy foods. However, now that we have a little one I don’t get to make as many of our favorite spicy dishes anymore. Luckily, this soup can go both ways. I add the hot sauce at the end, but I make sure to take enough soup out for my daughter beforehand. The chicken soup is wonderful even without the Franks hot sauce.

As with most of my recipes, this makes A LOT! I always tend to make more than I should, but we eat a lot of leftovers and even freeze them for quick meals. I hope you enjoy this as much as we do. It’s definitely our go to meal when we have a cold.

 

**Tip-  Short on time? Shred a Rotisserie chicken.

 

 

Buffalo Chicken Noodle Soup

 

2Tbs. butter

4 carrots, julienned

4 stalks of celery, julienned

2 chicken breasts, cooked and shredded (I shredded a Rotisserie chicken)

8 cups of chicken broth

2 cups of water

1 pkg. 2.75 oz. Country Gravy Mix

1/4 tsp. garlic powder

1/4 tsp. onion powder

1 tsp. oregano

1/3 cup Frank’s Hot Sauce (or more if you dare)

8 oz. egg noodles

Shredded Cheddar Cheese (optional)

 

1. Melt the butter in a large stockpot over medium heat. Add the carrots and celery, sauté until tender.

2. Add the broth to the vegetables. Stir in the chicken and spices.

3. Meanwhile, heat 2 cups of water over medium heat in a saucepan. Once boiling, slowly whisk in the gravy mix until thickened. Whisk this mixture into the soup.

4. Add the noodles and bring to a boil. Once boiling, lower the temperature and let the soup simmer until the noodles are done. Slowly stir in the hot sauce before serving. Top with cheese and enjoy!

Taylor Farms Chopped Salads

I first encountered this salad at a Wegmans in Buffalo, NY. Unfortunately, there isn’t a Wegmans in Memphis. We do have a Kroger, but at the time they weren’t carrying these salads. I know because I called the Taylor Farms headquarters. Yep, it’s that good. I did find out that Sam’s Wholesale was carrying them, but as a Costco addict I wasn’t sure I could commit. I felt like a traitor marching into Sam’s and buying a membership just for a salad, but I did. Thankfully our Kroger is now carrying this so I don’t have to spend the annual $40 at Sam’s anymore.

Have you tried this salad? There are a few other types of these chopped salads including a Southwest chopped salad. Both are great, but Asian is my favorite. It’s a super quick meal. If there are any leftovers we usually put it in a wrap with some chicken for a healthy and quick lunch. You know when I’m willing to dish out $40 to be a traitor to my beloved Costco that this salad has to be good!
